Meet Chef Paolo Mascolo and Staff
As a child, Chef Paolo was introduced to the business of food preparation by his Father and had the privilege of learning the culinary arts throughout Europe (Greece, Holland, Spain, France and Dubai in Saudi Arabia). Beginning with a family owned Gelateria (ice cream shop) and Pizzeria in Rome Italy to owning his own Fine Dining Restaurant in Western Germany; Paolo has made the diversities of the culinary tastes his life’s work.
Upon the urging of the owner’s of Spirit of the West; Operated by Sunflower Hotels in Italy & U.S.A., Chef Paolo arrived in the U.S. and put his expertise in the Diverso kitchen, offering traditional Italian as well as the popular Texan dishes such as steaks.
